It’s noisy, it’s crowded and it’s not pleasing on the nose in this coffeeshop. But ignore all that and focus on the plate in front of you. The pan mee here is slick and silky, each finger-wide strand coated in a thick savoury sauce. There’s crunchy ikan bilis and lightly wilted mustard greens dumped somewhat unceremoniously on the side and a generous heap of salty crunchy minced pork scattered on top as the final, perfect finish. Served with ikan bilis broth and limey sambal belacan, it’s divine.
